                <text>In this study the physicochemical, microbiological, and fatty acid compositions together with the specific esterase activities of semi-hard goat cheeses made from native strains as starter and adjunct cultures were evaluated and compared against those of manufactured using commercial culture cheeses. The physicochemical composition was similar among cheeses, while the lactic acid bacteria were the predominant microbiota in all samples. The highest specific esterase activities were detected in cheeses with native strains. The fatty acid profile was significantly affected by native strains during the ripening time (60 days) since the conjugated linoleic acid (CLA) level increased from 0.60 to 1.03 g 100 g-1 of fatty acids, whereas cheeses with commercial starter showed a CLA content of about 0.60 g of fatty acids. In cheeses with native strains, it was detected the highest desirable fatty acids, Δ9-desaturase and CLA desaturase indexes and the lowest atherogenicity index. The native strains inoculated as starter and adjunct cultures, grew conveniently in the cheese, developed their full potential as reflected by the profile of the metabolites released during ripening and in the global sensory perception of cheeses, and contributed thus to the development of a healthier food.</text>

                <text>La principal carencia alimentaria en el mundo, son los productos proteicos, lo que se ha convertido en un gran problema de seguridad alimentaria ya que estos son de difícil producción, disponibilidad, alto costo, y consumo muy reducido. En el presente trabajo se obtuvo un concentrado proteico, al haber suspendido una muestra de 150 g de harina de Prosopis juliflora en una relación (1:8) harina-agua a pH 8 manteniendo el sistema con agitación mecánica constante durante una hora a 40°C y posteriormente acidificando el sobrenadante con HCI 1N hasta pH 6, consiguiendo un concentrado proteico con 75% de proteína. Luego se evaluaron sus propiedades funcionales, las cuales comparadas con las del concentrado de soya fueron similares en los siguientes parámetros de interés industrial, capacidad de retención de agua (344-346), densidad de la espuma, (0,25-0,30), y mayor en el índice de absorción de lípidos (334-306) respectivamente. Por lo que se concluye que el trupillo puede constituirse como una nueva fuente alternativa de proteína. Esto resulta importante porque es un vegetal nativo, cuyos costos de materia prima son menores a los tradicionales.</text>

                <text>Durante la mayor parte de la historia humana la problemática ambiental ha sido ignorada a partir de la consideración de unos recursos naturales infinitos. En la economía clásica el problema es abordado por primera vez por el economista Thomas Robert Malthus, pero sus planteamientos sólo alcanzaron censuras sociales y con posterioridad el asunto se olvidó hasta el siglo XX, cuando resurgen las preocupaciones desde la economía y las ciencias sociales. En la contabilidad y en el control la historia es más joven, los primeros documentos se remontan a la década de 1960, aunque existen antecedentes sobre valor y precio de estos recursos desde 1931. El asunto se ha manejado, especialmente, como un problema macro-económico sin interés ni desarrollos microeconómicos, donde sólo emerge su estudio en la década de 1980. La temática es iniciática, pero se fundamenta en resultados de investigación y prácticas profesionales y se constituye en un indicador de caminos de progreso del conocimiento que dinamice la innovación tecnológica en el campo.</text>

                <text>En un predio ubicado en el municipio de Morroa, departamento de Sucre, en el Caribe colombiano, fueron construidas siete tipos de obras de bioingeniería, con el fin de rehabilitar los suelos y favorecer potencialmente la recarga del acuífero Morroa por aumento de la infiltración. El presente estudio describe las características de las obras construidas y la eficiencia de cada una en el cumplimiento de su fundamento técnico. Asimismo, fue evaluado el porcentaje de adaptación del material vegetal empleado en dichas obras. En términos generales los resultados técnicos obtenidos fueron satisfactorios, aunque es fundamental realizar educación ambiental y fortalecer el ejercicio de la autoridad con la comunidad de la zona, para garantizar la sostenibilidad de las obras de bioingeniería construidas.</text>

                <text>O objetivo deste texto é apresentar uma breve discussão sobre alguns aspectos de uma educação emancipadora, sob o viés de uma transformação epistêmica e curricular. Entendemos o currículo como construção social e cultural envolvido em relações de poder, criação de significados e hierarquizações. Dessa forma, quando o conhecimento curricularizado é principalmente o conhecimento moderno-ocidental, outras formas de conhecimento são deslegitimadas, o que contribui para a opressão de certos grupos por outros. Defendemos que uma transformação epistêmica tem o potencial de aproximar educação e emancipação social e cognitiva e, para tanto, apostamos na ecologia de saberes. Além disso, pontuamos que essa transformação deve se iniciar na formação de professores, pois a universidade ainda permanece com uma estrutura arbórea e fragmentada do conhecimento, onde há separação entre teoria e prática e os diferentes saberes da docência. Uma das conclusões a que podemos chegar é que o professor possui papel central nessa transformação rumo à emancipação, atuando como intelectual transformador, sendo a escola, ainda, espaço privilegiado para pensarmos e tornarmos possíveis outros mundos. Education and Emancipation: social and cognitive justice  The purpose of this text is to present a brief discussion about some aspects of an emancipatory education, under the bias of an epistemic and curricular transformation. We understand the curriculum as a social and cultural construction involved in relations of power, creation of meanings and hierarchizations. Thus, when curricular knowledge is mainly modern-western knowledge, other forms of knowledge are delegitimized, which contributes to the oppression of certain groups by others. We argue that an epistemic transformation has the potential to bring education and social and cognitive emancipation closer to the ecology of knowledge. In addition, we point out that this transformation must begin in the formation of teachers, because the university still has a tree structure and fragmented knowledge, where there is a separation between theory and practice and the different knowledge of teaching. One of the conclusions we can reach is that the teacher plays a central role in this transformation towards emancipation, acting as a transforming intellectual, and the school is still a privileged space to think and make possible other worlds. Educación y Emancipación: justicia social y cognitiva  RESUMEN  El objetivo de este texto es presentar una breve discusión sobre algunos aspectos de una educación emancipadora, bajo la línea de una transformación epistémica y curricular. Entendemos el currículo como construcción social y cultural involucrado con las relaciones de poder, creación de signifi cados y jerarquizaciones. De esa forma, cuando el conocimiento curricular es principalmente el conocimiento moderno-occidental, otras formas de conocimiento son deslegitimadas, lo que contribuye para la opresión de ciertos grupos por otros. Defendemos que una transformación epistémica tiene el potencial de acercar educación y emancipación social y cognitiva y, para ello, apostamos en la ecología de saberes. Además, señalamos que esa transformación debe iniciarse en la formación de profesores, pues la universidad aún permanece con una estructura arbórea y fragmentada del conocimiento, en que hay separación entre teoría y práctica y los diferentes saberes de la docencia.                 <text>Vegetation change under two climate change scenarios in different periods of the 21st Century are modeled for Colombia. Vegetation for the years 1970 to 2000 was reproduced using the Holdridge model with climate data with a spatial resolution of 900 meters. The vegetation types that occupied the most territory were sub-humid tropical forest, tropical dry forest and Andean wet forest. These results were validated by comparing with the Colombian ecosystem map (SINA, 2007), which confirmed a high degree of similarity between the modeled spatial vegetation patterns and modern ecosystem distributions. Future vegetation maps were simulated using data generated by a regional climate model under two scenarios (A2 and B2; IPCC, 2007) for the periods 2011-2040 and 2070-2100. Based on our predictions high altitude vegetation will convert to that of lower altitudes and drier provinces with the most dramatic change occurring in the A2 scenario from 2070-2100. The most affected areas are the páramo and other high Andean vegetation types, which in the timeframe of the explored scenarios will disappear by the middle of the 21st Century.</text>

                <text>Nesting ecology of Morelet's crocodile (Crocodylus moreletii) has been documented since 1940. However, only 2 nests constructed on floating vegetation have been recorded. Here, we presented additional information from a mainland population of C. moreletii in the Ciénega de Cabezas wetland, San Luis Potosí, describing 2 nests constructed on floating mats of cattails. The nests were constructed using Typha sp., close to the main channel. One nest was lost due to flooding, and contained 32 eggs. Seven eggs had a mean 72.6 ± 2.63 mm length (range = 70.0 -75.0 mm), 45.0 ± 2.30 mm width (range = 41.0-48.0 mm), and 140.7 ± 2.98 mm diameter (range = 136.0-145.0 mm). We suggest that the use of floating vegetation for nesting by C. moreletii is related to the availability of aquatic vegetation, combined with the lack of adequate nesting sites on land.La ecología de anidación del cocodrilo de pantano (Crocodylus moreletii) ha sido documentada desde 1940. Sin embargo, sólo existen 2 registros de nidos construidos sobre vegetación acuática. Presentamos información adicional de 2 nidos (N1 y N2) construidos en este tipo de hábitat en una población ubicada en la Ciénega de Cabezas en el estado de San Luis Potosí. Los nidos fueron construidos sobre Typha sp., cerca del cauce principal de la ciénega. El N2 se perdió por inundación, en su interior encontramos 32 huevos, los promedios (± SD) del largo, ancho y diámetro de 7 huevos fueron 72.6 ± 2.63 mm (rango = 70.0 -75.0 mm), 45.0 ± 2.30 mm (rango = 41.0-48.0 mm), 140.7 ± 2.98 mm (rango = 136.0-145.0 mm), respectivamente. Sugerimos que este tipo de sitios para anidar por parte de C. moreletii está relacionado con la disponibilidad de vegetación acuática, combinado con la ausencia de sitios adecuados en tierra firme.</text>
