The research methodology was based on ethnography, following techniques features interviews and participant observation fieldwork in social anthropology. This strategy essentially qualitative, allowed us to analyze the consequences of transitions households own products and traditional farming systems, the economics of quality that characterizes the New European Rurality has had a special development in Spain for the strong implementation European Initiatives LEADER I, II and + from 1991.
