A composição química das raízes é influenciada por fatores genéticos e condições de cultivo, e pode sofrer alterações pós-colheita, entre as quais se destacam os danos microbiológicos e fisiológicos, que podem levar à inviabilidade comercial do produto. O objetivo do presente trabalho foi avaliar os atributos físico-químicos de cenouras orgânicas submetidas a diferentes ambientes de conservação pós-colheita e métodos sanitizantes. Os parâmetros avaliados foram teor de matéria seca (%), teor de sólidos solúveis (ºBrix), pH, acidez titulável (% de ácido cítrico) e teor de carotenoides (mg/100g). O armazenamento das raízes de cenoura em geladeira proporcionou maior conservação dos carotenoides. A aplicação de álcool 70 % aumentou o teor de carotenoides nas raízes de cenoura armazenadas em geladeira.
