Cellulase, lignin peroxidase and manganese peroxidase enzyme activities were determined in extracts produced by Lentinusedodes which was grown in sawdust to determine the periods of the highest generation of enzyme activities. The extracts showed higher cellulolytic enzyme activity being the first day of harvest the one in which the maximum value was obtained. Manganese peroxidase activity showed the best production during the induction periods. Ligning peroxidase showed no activities during the whole process. The extracts were stored at: room temperature (15 ºC), 3 °C and -14 °C to assess their stability, being – 14 ºC the best condition to maintain it.</text>
