La metodología empleada fue experimental, bajo el  diseño 23, tomando como factores de estudio el pH de la solución (5 y 6), temperatura  del líquido (25º y 35ºC) y concentración de alginato de sodio (0,8 y 1,2%), las variables  de respuesta analizadas fueron viscosidad de la mezcla, textura de ruptura y morfología  del gel, como resultado se obtuvo que el mejor tratamiento se da a condiciones de:  pH=5, temperatura=35ºC y concentración de alginato=1,2%, concluyendo que los  factores de pH y viscosidad influyen de manera directa en las características de textura y  morfología, las cuales son determinantes en la aceptación del producto.
