              <text>La cuestión de las pérdidas de alimentos es muy importante en los esfuerzos para combatir el hambre, aumentar los ingresos y mejorar la seguridad alimentaria en los países más pobres del mundo. Las pérdidas de alimentos afectan a la seguridad alimentaria de los pobres, a la calidad y la inocuidad alimentarias, al desarrollo económico y al medioambiente. La investigación fue realizada en el mercado agropecuario estatal “La Vallita”, ubicado en la avenida Garzón en la ciudad de Santiago de Cuba, en el periodo de septiembre de 2018 a abril de 2019. La presente investigación tiene como objetivos determinar las causas de las pérdidas de los productos agropecuarios., elaborar una estrategia de reducción de pérdidas y desperdicios de alimentos de uso interno del mercado para elevar el estándar de servicio y por último cuantificar económicamente las pérdidas y desperdicio de alimentos (PDA) durante el periodo de investigación para implementar medidas que reduzcan las mismas. Las pérdidas y desperdicios de alimentos ocurren principalmente por fallas en el sistema productivo.  Palabras clave:   Pérdidas, desperdicios, alimentos.    ABSTRACT The issue of food losses is very important in efforts to fight hunger, increase incomes and improve food security in the poorest countries of the world. Food losses affect the food security of the poor, food quality and safety, economic development and the environment. The research was conducted in the state agricultural market “La Vallita”, located on Garzón Avenue in the city of Santiago de Cuba, from September 2018 to April 2019. The purpose of this research is to determine the causes of the losses of agricultural products develop a strategy to reduce losses and waste of food for internal use of the market to raise the standard of service and finally quantify economically the losses and waste of food during the investigation period to implement measures that reduce the same.
